Mint Syrup

Mint is probably one of my favorite herbs to grow! First off know that mint grows like crazy and as you can see here over take the area it is growing in. If you are not a big fan of mint I would grow it in a pot. Keep in mind mint spreads, when I first planted this area it was just tiny now it is full of beautiful, aromatic mint.  Mint will spread and when it does this it will lay down its roots and grow more mint. So it is best to keep it in an area you can control. I however love mint so this little area is dedicated to my mint. There are so many different kinds of mint anything from pineapple, grapefruit, apple, mojito, spearmint, peppermint and my all time favorite chocolate mint! There are so many thing you can do with mint, you can use it fresh during the summer and at the end of the growing season you can dry it. I am going to show your how to make mint syrup. This is so easy and you can do many things with it. Here are some of the things you can do with mint syrup pour it over chocolate ice cream, mix it in tea, coffee or hot chocolate. I have even given it as a gift. You can just put it in a jar and tie a bow around it and just like that you have a yummy homemade gift. Let me know if you try this and what you use it for!



Ingredients:

1 cup fresh mint, chopped 
1 cup water 
1 cup sugar

Yields about 1 1/2 cups



Pick your mint from the garden rinse and dry it. Next chop the mint stem and all.



Place mint in a bowl or other heat proof container while you make the sugar syrup. In a pan bring the water to a boil. Once water has boiled add the sugar and stir until dissolved. Carefully pour syrup mixture over the mint leaves and stir to be sure all mint leaves are covered. Place plastic wrap over the top and let sit until room temperature. Placing the plastic wrap over the bowl prevents the flavor from escaping. The essential oil in mint is what gives it its flavor. The mint leaves will become wilted by the time it is at room temperature. Gather your jars you will be storing your mint syrup in. Use a strainer to strain the mint syrup. The mint syrup can be stored in the refrigerator for up to 3 weeks and in the freezer for up to 2 months! Enjoy

Hello! To those of you who do not know me my name is April Purdy. I am a very busy person so when I make something I want it to look and taste good but be simple. I also want it to be practical, hence the name of my blog. I hate having things lay around my house that I just have no need for. I am currently in nursing school and those of you who are doing this or have done this know that you have no free time, so simple is what works best.
